She chose a healthier way of eating for her family that ignited a passion to create unique and delicious vegan, gluten-free and oil-free recipes that use nature’s powerful whole foods to nourish and promote a healthier body and a healthier mind. Brandi’s belief is that food can be easy, use minimal ingredients, yet still be shockingly delicious.

These Maple Roasted Carrots are a quick and easy side made by combining cinnamon, maple syrup and more, tossing fresh carrots and then baking for a delicious snack or the perfect compliment to a dinner. Enjoy!

INGREDIENTS

  • 1 16 oz bag organic baby carrots
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sweet paprika
  • 1/2 teaspoon fine sea salt
  • 2-3 tablespoons water
  • 1/4 cup grade A pure maple syrup
DIRECTIONS
  1. Preheat oven to 400 degrees.
  2. To a large bowl, add all of the ingredients except the carrots and mix well.
  3. Toss the carrots in the mixture, trying to coat as evenly as possible.
  4. Line a span with parchment paper and spread the carrot mixture evenly across.
  5. Sprinkle some extra cinnamon, and then bake for 20-25 minutes.
  6. Enjoy!
