This Cool Summer Herbal Pasta Salad is a delicious dinner dish that combines garden fresh veggies like cucumber, peas and broccoli with a gluten free quinoa and corn penne and then tops it off with a tangy green sauce of lime, cilantro, mint and garlic. Enjoy!

INGREDIENTS

For the Pasta Salad

  • Quinoa and corn penne
  • Fresh cucumber
  • Yellow pepper
  • Peas
  • Chopped cilantro
  • Steamed broccoli

For the Green Sauce

  • 3 tablespoons hemp seeds
  • Juice of 2 limes
  • 1/2 bunch cilantro
  • 1 small bunch mint
  • 1/4 cup water
  • Garlic powder
  • Salt
  • Lemon pepper seasoning
DIRECTIONS
  1. Add the pasta salad ingredients to a medium to large bowl.
  2. For the sauce, place all ingredients in a blender of your choice and blend until creamy.
  3. Drizzle the sauce over your salad.
  4. Enjoy!
