These Chocolate Maca Cookies combine chia seeds, coconut sugar, cashew butter and more with our Epic Protein : Chocolate Maca for delicious vegan cookies that are packed with complete plant protein. Enjoy!

INGREDIENTS

  • 1 Tbsp chia seeds
  • 3 Tbsp coconut sugar
  • 2 Tbsp Epic Protein : Chocolate Maca
  • 2 tsp pure vanilla extract
  • 2 Tbsp cashew butter
  • 2 Tbsp coconut oil, melted
  • 1⁄2 cup water
  • 1 tsp sea salt
  • 1 tsp baking soda
  • 1⁄4 cup oats
  • 1⁄2 cup dark chocolate chips (I used mini ones)
  • 1 1⁄4 spelt flour
  • DIRECTIONS
    1. Preheat oven to 350 degrees F.
    2. Line two baking sheets with parchment paper.
    3. In a large bowl, combine all dry ingredients and mix well.
    4. Stir in the water and melted coconut oil.
    5. Stir until ingredients are well mixed and dough isn’t lumpy.
    6. With a tablespoon, scoop out a spoonful of dough and drop on the cookie sheet.
    7. Bake cookies for 44 – 50 minutes until the base of the cookies are golden brown.
    8. Enjoy!

    Makes about 27 cookies
