Beet Hummus Toast
This Beet Hummus Toast takes your basic avocado toast to a whole new level by adding a beet-hummus spread, fresh radish and cucumbers slices and our FD Red Clover & Daikon Radish Sprout Mix for an added boost of superfood sprouts. Enjoy!
Featuring FD Red Clover & Daikon Radish Sprout Mix:

INGREDIENTS

  • 1 tbs FD Sprout Mix Red Clover & Daikon Radish
  • 2 pieces of multigrain toast
  • 4 tbsp hummus
  • 1 boiled beet
  • 1/2 avocado, sliced
  • 1/4 cucumber sliced thin
  • 1 small radish sliced thin
  • salt and pepper to taste
DIRECTIONS
  1. Fill a large saucepan with water, and set over high heat.
  2. Bring water to a boil. Stir in salt, and add beet.
  3. Boil until fork-tender, about 45 minutes.
  4. *Meanwhile* slice avocado, cucumber and radish.
  5. Drain the beet, let cool and rub off skin under cold water.
  6. Toast the bread.
  7. Using a fork, mash the boiled beet into the hummus and spread mixture over toasted bread.
  8. Top with avocado, cucumber and radish slices.
  9. Sprinkle with FD Red Clover & Daikon Radish Sprout Mix and salt and pepper to taste.
  10. Cut in halves, serve and enjoy!
