Full of antioxidants, sweet and delicious – this yogurt parfait combines strawberry chia jam, vanilla coconut yogurt, acai coconut yogurt and banana chocolate pudding. Top it off with blackberries and strawberries, and you have a decadently fresh treat. Enjoy!

INGREDIENTS

Strawberry Chia Jam

  • 1 cup strawberries
  • 2 medjool dates
  • 1 heaping tablespoon chia seeds

Acai Coconut Yogurt

  • 1/2 cup coconut yogurt
  • 1 tablespoon acai powder

Banana Pudding

  • 2 ripe bananas (the riper, the better)
  • 1 heaping tablespoon of raw cacao
DIRECTIONS
  1. To make the chia jam, place the strawberries and dates in a blender and blend on high for 20-30 seconds, stirring in the chia seeds. Wait at least 15 minutes for the chia seeds to expand and form the jam.
  2. Enjoy!
