Brandi is the creator of the blog The Vegan 8. She has been a passionate cook for years, but it was her husband’s painful disease with gout that led her to choose a vegan lifestyle. She chose a healthier way of eating for her family that ignited a passion to create unique and delicious recipes that also happen to be vegan, gluten-free and oil-free. Her blog has become very popular, as it focuses on 8 ingredients or less, so anybody can make them with ease. Brandi believes in using nature’s powerful whole foods to nourish and promote a healthier body and a healthier mind. She enjoys creating food that everybody loves, whether vegan or not. Brandi’s belief is that food can be easy, use minimal ingredients, yet still be shockingly delicious.

What first motivated you to pursue a healthier, cleaner diet?

My husband suffered from severe gout due to the inflammation caused from animal products. After watching him suffer for years being on and off crutches, I eventually researched info about a vegan diet. We first went vegetarian and then vegan and he basically was healed. We have never looked back. He is pain-free now and we are both so much healthier and my daughter is being raised vegan as well. One of the best decisions we’ve ever made.

What’s your favorite fruit and vegetable?

My favorite fruit is hands-down, apples. Honeycrisp to be exact. My favorite vegetable is broccoli. Bell peppers and zucchini are closely tied.

What’s your favorite guilty pleasure food?

My favorite guilty pleasure food is a cupcake. Nothing satisfies quite like a cupcake with lots of icing.

What’s your favorite meal of the day, and why?

I don’t really have a favorite meal of the day, I enjoy breakfast, lunch and dinner but I guess I would say lunch because I tend to eat leftovers from dinner the night before and leftovers always taste better the next day. I usually stuff my face at lunchtime too!

How do you like to start each day?

I start each day with food and some time with my daughter. I also do work in the morning.

Do you have an all-time favorite recipe?

My all-time favorite recipe….oh my gosh, that’s impossible to pick just one, but at the moment and most days my favorite thing to eat in general is soups or chili. I enjoy nothing more than sitting down and eating a huge hot bowl of chili/stew/soup. My favorite chili is my Cocoa Black Bean Chili with Roasted Potatoes. I love to add carrots and a touch of maple syrup to it as well for a subtle sweetness. It is so good! My favorite dessert recipe is again, hard to choose, but I think nothing makes me quite as happy as my Double Chocolate Espresso Almond Cookies. They are also a huge hit with family and friends each year I make them at gatherings.
