Freeze-drying or lyophilization is the process of dehydrating already frozen food products. It is a unique, scientifically tested and meticulously controlled process, which is designed to provide unparalleled moisture removal and extreme preservation. This subzero technique maintains the full integrity of virtually every single living compound, enzyme and nutrient in its complete, unaltered state. The outcome of this process is the inhibition of growth of microorganisms and bacteria (caused by water), thereby dramatically increasing the shelf-life of living foods. Since we are only removing water, freeze-dried products retain all their organic health benefits, nutritional values, original flavor and natural color as their fresh, pre-dried counterparts. Because of this natural and cold temperature preservation we are able to avoid using any forms of preservatives, most of which have been linked to many health problems. Removing moisture also concentrates the nutrients and flavor. For this particular line of FD™ Sprout Mixes, the ratio of fresh to dried product is 3:1. It takes 3 pounds of fresh sprouts to make 1 pound of FD™ Sprouts.
